Khagina Eggs for Dinner

Ever since reading Spice Spoon’s recipe for khagina scrambled eggs, I’ve quickly worked it into my regular repertoire for a quick weekday dinner.  Scrambled eggs, always a cozy luxury, are enlivened by some warming spices, and given a little bit of heft with onion and potato.  I prefer adding the spices in with the onion and potato to cook, instead of with the eggs, but have otherwise been following her recipe to a tee.

I’ve been having it with a side salad of greens and cucumbers with a drizzle of red wine vinaigrette, and a piece of Trader Joe’s lavash, one of my newest kitchen staples.  Not too bad, for a quick weekday dinner, don’t you think?
